Ingredients

Dough 

  • 3 tbsp. Semolina 

  • 3 tbsp. Water 

  • 2 cups Powdered Milk 

  • 2 tbsp Clarified Butter 

  • 2 tbsp. All-Purpose Flour 

  • 1 tsp. Baking Powder 

  • 6 tbsp. Milk 

 

Syrup

  • 2 cups Sugar 

  • 2 ½ cups Water 

  • 3 Cardamoms 

  • 1 tsp. Lemon Juice

Instructions

  1. In a bowl, mix together flour, water, plain yogurt, and baking soda. After everything has been well combined, allow the batter to rest for 15 minutes. Make sure the batter set aside is a thick consistency to prevent any dispersion in oil while shaping the jilapi’s. 

  2. In a medium pot on medium heat, prepare the jilapi syrup using sugar, water, and cardamoms. When the syrup comes to a boil add in the lime juice. Remove the syrup from the heat once the syrup is a stringy consistency. 

  3. Transfer the batter into a squeeze bottle then create your jilapi shape using a spiral motion in oil that’s on low heat to hold its shape. 

  4. Once all the jilapi has been shaped in the oil, crank up the heat to medium-high to fry until light golden brown. 

  5. Coat the jilapi’s in the syrup then transfer onto a cooling rack. 

  6. Serve and Enjoy hot!
