STRAWBERRY MOCKTAIL

Ingredients

For the Strawberry Simple Syrup

  • 1 cup sugar

  • 1 cup water

  • 1 cup strawberries (chopped and pulsed in the blender)

 

For the Mocktail

  • 1 tbsp. strawberry simple syrup

  • 1 cup lemon/lime soda (if you have lemon-lime flavored seltzer you can use that as well that’s what I used)

  • 1 tbsp. lime/lemon juice

  • Top with macerated strawberries (Take some washed and halved strawberries, sprinkle with sugar, and let it sit on the side for an hour or so. Do it before you begin prepping everything that way it’s ready when you assemble your drink.)

Instructions

Directions for Simple Syrup

  1. In a saucepan/ pot add in 1 cup water, 1 cup sugar and 1 cup pulsed strawberries and bring to a boil. Make sure the sugar is well dissolved.

  2. Take it off the heat and let it cool

  3. Strain your syrup using a mesh strainer that way you don’t have leftover strawberries

  4. Let your syrup cool

 

Directions to Assemble Mocktail

  1. In a glass add in a tablespoon of the simple syrup, lemon/lime soda or seltzer, and lemon/lime juice.

Tips

  • If you’re not that big on sugary/sweet drinks, you can adjust it, by going a little low on the sugar in the simple syrup.

  • Make sure to cool the simple syrup to room temperature before actually assembling your drink

  • You can store the simple syrup in the refrigerator in a well-sealed bottle. (I stored it in a water bottle.) Whenever you want the drink you have the syrup ready and can make it instantly.

  • For a nicer/fancier look, in a bowl mix 1 tbsp of sugar and the zest of one lime/lemon, then wet the rim of your glass and dip it in the mixture so it’s nicely coated

  • This drink tastes good cold, trust me, so fill your glass with some ice

  • You can adjust the proportions of the lemon/lime juice to your preference, even the simple syrup, depending on whether or not you like it tangier or sweeter.

  • Make sure to give everything a nice stir, top your drink with macerated strawberries, lemon/lime slices and if you want a little kick a mint leaf

  • If you’re making this for a party, don’t add in the seltzer until a minute or two before it’s time to drink because then all the fizz will go away.
